Cranberry Coconut Raw Bars


1 cup date caramel (dates that have been soaked in warm water until soft, drained then blended until completely smooth and creamy)
1 cup walnuts
1 cup cashews or almonds
1 cup desiccated coconut
1/3 cup chopped dried cranberries
1/3 cup chia seeds
Optional: 1/3 cup high quality plant protein powder
In a food processor, pulse nuts until they form large crumbs. In a big bowl, mix all ingredients together well then press into a baking dish and put in the freezer for a minimum of 2 hours. Once set hard, cut into bars and keep stored in the freezer
