So what were the exact measurements? For one, I didn’t measure exactly and, for two, it’s more fun to come up with your own. There’s a lot of leeway when you’re dealing with fresh vegetables and herbs, so don’t stress too much over the amounts. I’ll give you approximates, though:

2 1/2 cups chopped tomatoes (pick extra juicy ones)
1 cup chopped bell pepper
1 cup chopped seedless cucumber
1/4 cup chopped parsley
1/2 cup olive oil
2 tablespoons fresh oregano
4 tablespoons cilantro
5 cloves garlic
1/2 large red onion
2 hard boiled eggs
Juice from half a lemon
Salt to taste
Pepper to taste
Balsamic vinegar to taste
Hot sauce to taste

Just throw it all in a food processor or a blender (or even a big mortar and pestle, like how they used to do it) and blend. Add the olive oil, salt, pepper, vinegar, and hot sauce as it’s blending, making sure to stop it every once in awhile to taste. Once you’re done, let it …

Hot, Hot, Hot: How to Make the Ultimate Salsa The term salsa might by synonymous with chips but, realistically, there are plenty of uses for good ol’ salsa. Salsa makes a great filling for omelets, can be used to spice up – and keep moist – oven-baked chicken, to add bulk (and flavor) to burger patties, and even as a substitute for salad dressing. In fact, one source we referenced suggested that the Aztecs awaited the arrival of the Spanish conquistadors with pots of a boiling salsa in the hopes that theinvading troops would actually become the main course!

Beef Stirfry with Veggies

Sweet Meat Stir Fry
1 cup orange juice (4 freshly squeezed oranges)
3 teaspoons of fresh ginger chopped
1 garlic clove chopped
1/8 teaspoon chopped chili
1 pound boneless beef sirloin steak, cut into thin strips
1 tablespoon extra virgin olive oil
5 cups cut-up vegetables, such as broccoli, sliced onion, carrot, sugar snap peas and red bell pepper strips (capsicum)
1 tablespoon honey
1 teaspoon sesame seeds
2 tablespoons of water

1. Mix orange juice, water, ginger, garlic and ground red pepper in small bowl. Reserve 1/2 of the marinade. Place beef in large glass dish. Add remaining marinade; turn to coat well. Refrigerate 17 minutes or longer for extra flavor.
2. Heat oil in large skillet on high heat. Remove beef from marinade. Add beef to skillet; stir fry 3 minutes or until beef is no longer pink. Remove beef from skillet. Add vegetables; stir fry 3 to 5 minutes or until tender-crisp.

Stuffed Squash

Stuffed Squash
serves two
2 carnival squash (I think. See photo. Acorn will work, too)
1 cup of uncooked ground beef or leftover roast
1 spring onion, sliced
1 large clove of garlic, minced
4 or 5 cremini mushrooms, diced
2 tbsp butter or ghee
1/4 cup diced green chili’s (canned, optional)
1 tsp chili powder
2 tsp oregano
Sea salt + pepper
1/4 cup canned, full fat coconut milk

Preheat the oven to 400 degrees.
Slice your squash in half, and place seeds down in a pan. Fill a centimeter with water – this will prevent sticking ; make the flesh nice and soft.
While it’s baking, saute the sliced onion and garlic in melted butter. Careful not to burn it! Add the raw beef in little bits, and stir. Add the seasonings, and the chilis if you’re using them.Or using cooked beef at it last to warm up the meat.
After 30 minutes, check your squash by poking the skin with a fork. If it slides through, they’re done. Pull them out and toss the seeds. Scoop out the flesh (careful not to rip the skin…

Slow Cooked Rump Roast w/ Mushroom Gravy

Mushroom Gravy Slow Cooked Rump Roast Serves: 4-6 Ingredients 1-2 lbs beef rump roast1 cup low sodium organic chicken or beef broth1-2 large onions, roughly chopped5-6 garlic cloves, peeled1 container of mushrooms, slicedsalt and pepper to taste1 teaspoon garlic powder1 teaspoon onion powder½ teaspoon paprika1 cup full fat coconut milk, canned

 Get your crockpot! Start to sear roast on all sides.Add in your broth, coconut milk, onions, garlic, mushrooms, and spice to your crock pot and mix together.Make a little room in your crockpot around the mushroom mix and plop that cute little rump roast in the pot.Turn on low for 6-8 hours or high for 4-6 hours.Cut it up, strain the mushrooms,blend the liquid and onions.Add  the mushrooms to the gravy and pour over sliced roast!!

For the buns:
1 large sweet potato
1 tsp extra-virgin olive oil (or coconut oil)
1/2 tsp ground cinnamon
Himalayan sea salt

Everything Else:
5 eggs
4 strips bacon
2 handfuls fresh organic spinach (sauté)

Preheat oven to 400
Line baking sheet with foil and spray it
Cut sweet potatoes into 1/2 inch thick rounds
Toss with oil, cinnamon, and sea salt
Lie flat on baking sheet
Bake for 25 minutes or until fully cooked, flipping over halfway through
Scramble Eggs and set aside
Saute spinach in 1 tsp oil and set aside
Cook bacon according to cooking instructions and set aside
Put together sandwiches and serve hot.

1/2 cup butter, melted
3 large eggs
1 (18 1/4 ounce) package yellow cake mix
1 (8 ounce) package cream cheese
1 (16 ounce) package powdered sugar

2Stir until well blended.

3Press into the bottom of a lightly greased 13X9 inch pan.

6Beat at medium speed until smooth.

7Pour cream cheese mixture over cake mix layer.

8Bake at 325 for 40 minutes or until cheese mixture is set.
