Black Bean Quinoa Salad

INGREDIENTS 15 OZ CAN DRAINED BLACK BEANS1 CUP QUINOA, COOKED1 CUP CORN1 YELLOW BELL PEPPER, CHOPPED1 CUP ONION, CHOPPED1 CUP CHERRY TOMATOES, QUARTERED1 AVOCADO, CLEANED AND DICED1/2 CUP FRESH CILANTRO, CHOPPED1 TBSP GARLIC, MINCED3 TBSP LIME JUICE1 TBSP OLIVE OIL1/2 TSP CHILI POWDER1/4 TSP CUMINTO TASTE SALT & PEPPER METHOD: Combine all ingredients and portion into 4 servings.Store in an airtight container in the refrigerator.Serve over a bed of arugula and spinach.

Eggplant Pizza

It doesn’t get much easier than pizza – and this one is healthy too! Ingredients: 
1 large sized eggplant
1 cup shredded mozzarella
1 can tomato sauce or store-bought marinara sauce
1 tsp basil
1 tsp oregano Slice the eggplant lengthwise, making probably 6-8 slices about ½ inch thick. Place on a greased cookie sheet and place under a broiler. Broil until light brown. Remove, flip and cover with tomato sauce, basil, oregano and mozzarella cheese. Place back under the broiler. Feel free to add more toppings here – peppers, onions, pepperoni, diced ham – whatever your favorite pizza is, feel free to add it here! Should serve 3-4 people depending on how big your eggplant is.

Shrimp,Cabbage and Asparagus Stir Fry

Ingredients

 10 medium shrimps cut in half cooked
1/4 cabbage cut in strips and in chunks
1/4 leek,cleaned cut in half and sliced thin
fresh ginger,sliver smashed and minced
garlic clove cut and minced
1 T tamari
half a lime , juiced
cilantro
egg,beaten

Directions

Take coconut oil about a tablespoon. Heat it up in a pan add asparagus for a few minutes than add the leeks and cabbage stirfry for at least 5 minutes. Than add the ginger and garlic. Give it a good stir. Than add tamari..Add the shrimp and lime juice..Stir till shrimp is warmed through..Pour it in a bowl with cilantro and rooster sauce..Enjoy!! Serves one big bowl or 2 small..


I made this just from the leftovers in my refridge..I had to use the veggies and I did not want to juice or make soup. It still is way to hot here in Texas for a lot of soup making. So this was easy and really good. Some of the best recipes come from scraps...lol
