Ingredients1 lb Ground Beef1 lb Sausage1/2 Onion, diced3 Tbs Chili powder1 Tbs unsweetened cocoa powder1 Tbs Smoked Paprika2 Tbs Cumin1/2 Tsp dried oregano1 Tsp salt1 Tsp pepper2 Tsp garlic powder (or fresh garlic)2 cups beef bone broth (I prefer the Kettle & Fire Bone Broth)15 oz can of fire roasted tomatoes1 Can of Rotel (tomatoes & chilis) or 1 small jalapeno, ground and seeds are taken outOptional Ingredient:  1/4 Tsp Xanthan for extra thickness Instruction  Dice the onion.Turn the Instant Pot on Saute mode.  Add 1 Tbs olive oil and saute the onions.Add the raw ground beef and sausage and cook it until it has browned.Add the Chili powder, Cocoa, Smoked Paprika, Cumin, Dried Oregano, Salt, Pepper, and Garlic Powder to the meat mixture.  Stir until it’s well combined.Add the bone broth, fire roasted tomatoes and Rotel (or jalapeno).If you like a thicker chili, add a 1/4 tsp of Xanthan.  Sprinkle it over the chili and mix it thoroughly.Turn the Pressure cooker on the manual…

How do you cook the chicken for these tacos? I recommend grilling the chicken for these tacos, but if you don’t have a grill, then I’d recommend cooking the marinated chicken in either a grill pan or a skillet. For grilled chicken tacos:  Trim the fat off the chicken breasts and pound the breasts to an even thickness to ensure even grilling. You can also slice the breasts evenly in half width-wise to make them cook faster. Place the prepared chicken in a large ziplock bag and set aside.Whisk together the marinade in a small bowl: Olive oil,  lime zest, freshly squeezed lime juice, minced garlic, cumin, paprika, chili powder, and salt + pepper. Once the mixture is well combined, remove about 2-3 tablespoons of the mixture and reserve for later.Add the rest of the marinade in the bag with the chicken.
