Grilled Mexican Street Corn

Ingredients 8   ears of fresh corn on the cob 2   fresh jalapenos 3/4   cup   fresh cilantro, chopped 4-5   green onions, diced  (we used green tops only) 1   cup   Cotija cheese Dressing: 1/4   cup   mayonnaise 3   Tablespoons   of fresh lime juice 1   clove   of garlic   minced 1/4-1/2   teaspoon   kosher salt   adjust to taste 1/2   teaspoon   fresh ground pepper Instructions Preheat the grill to 400ºF. Grill the corn and jalapenos for 15-20 minutes, turning frequently, until lightly charred. Carefully cut the corn off the cobs into a large bowl. Chop and seed (if desired) the grilled jalapenos and toss in the bowl with the corn. Add the cilantro and green onions. In a small bowl mix the dressing ingredients. Pour over the corn mixture and toss to combine. Add the Cotija cheese and gently toss to incorporate. Serve warm, room temperature or cold

DIRECTIONS Chicken: 1.  Combine all chicken seasonings and 1 tablespoon of olive oil into a mixing bowl (or Ziploc bag). Add the chicken breast and toss to coat. 2.  In the meantime, heat a nonstick griddle pan over medium heat brushed with 1 tablespoon of olive oil. 3.  Once the grill pan is heated, add chicken breast and cook on each side approximately 3-4 minutes. Cooking time will depend on the thickness of chicken breast. Remove from the pan to a plate and allow to cool. Lime Juice Dressing: 1.  While chicken is cooking, combine all ingredients for the lime dressing into a small mixing bowl. Whisk well to combine. Salad: 1.  Once the chicken breast has cooled, cut into small cubes. Combine in a large bowl with the ingredients for the salad (cucumber, tomatoes, red onion, corn, and avocado). 2.  Drizzle the lime juice dressing over the top and toss well to combine. Serve immediately or keep a few hours in the refrigerator, enjoy!Av

6-8 SERVINGS  BROWN 1 lb ground beef (I use grass fed) 4 slices turkey bacon diced 1/4 large onion diced 2 cloves garlic minced ADD AND MIX 2 Oz cream cheese 3 TBSP low carb ketchup 2 Tbsp Cuban mustard 1 tbsp Worcestershire sauce  Scant 1/8 tsp liquid smoke POUR INTO GREASED 8x8 DISH BEAT TOGETHER  5 eggs 1-2 TBSP Hot sauce POUR OVER MEAT MIX ADD enough cheese to cover top BAKE 350° for 40 min, let rest for about 5 min or so Served with mushrooms sautéed in kerigold

Egg Fast Day 5

NOTE FOR THE DAY:  Most people Egg Fast for 3-5 days at a stretch. By Day 5, many people will be anxious to finish and perhaps, not eat another egg for a while. The Fluffys are a little loony, because we love eggs so much, we could and do, eat them every day. This is the last day in the 5 day Egg Fast program. The BRINNER (Breakfast for Dinner) menu is lovely and filling, making you forget you’re on an egg fast. The Psylli Pumpkin Spice Egg Fast Pancakes with Salted Caramel Syrup is filling and perfect fall food. If you don’t care for a particular meal, feel free to substitute meals, days, or rotations. We tend to lose between 5-7lbs during the 5 day Egg Fast (most of that is water). We transition back to non-Egg Fast food over the next week. Most will see some regain, but if you raise carb levels very slowly, you will be able to maintain most of that loss as true weight loss. NOTE FOR THE DAY:  If it’s eggs we’re doing, why wouldn’t fish eggs work? Fish eggs are  PACKED with nutrients : Vitamin B-12, vitamin D3, omega-3 fatty acids, and  nutrients that feed our brain  (nutrients not found in as high a ratio as other foods). Caviar is nutrient dense, dude! And delicious! Caviar is high in sodium, but it helps to rinse them gently in a cold water bath. Rinsing makes them taste more natural and rinses away much of the dyes used to color the caviar. It’s simple to rinse it: gently place in a fine hand held mesh strainer and dunk in and out of cold water (filtered). Change the water frequently and dunk until no more color leaches into the water. Place caviar and strainer on top of a bunch of paper towels and let it drain. Use immediately! So if not using and entire jar, only rinse the amount of caviar for that meal. NOTE FOR THE DAY:  Anytime we talk about butter, just know we mean grass fed butter (Kerrygold or homemade) made from the milk from pastured, grass fed cows. Why?
