Why Bone Broth?

Why is broth so good? Broth is amazing for not only gut health but also joint health. Containing valuable nutrients that we find hard to source from our modern diet including collagen, gelatin and glucosamine. These are nutrients that are required for strong bones, joints and a healthy digestive system. Not to mention all the amazing minerals present like calcium, magnesium zinc etc. For me while I was healing my l eaky gut  and  adrenal fatigue  broth become a valuable part of the healing process and a daily stable. How to make basic broth There are many ways you can make broth and I want to share with you my absolute basic recipe and my rolls royce version. More often than not I just make my basic and all that happens is when ever I do a roast chicken I save all the bones.  I then pop it in the slow cooker, with one onion and one bulb of garlic and cover with water. Made homemade carnitas for dinner. I wound up buying a too large pork roast .. The carnitas turned out amazing. Ingredients  3.5 lb pork roast cut into chunks 1 1/4 cup orange juice 3 tsp apple cider vinegar 3-4 tsp lime juice 1/2 tsp Cayenne pepper 3 tsp cumin 3 tsp Chili powder 7 cloves garlic diced 1 onion 1 chipolte chile pepper diced in adobo sauce (add a little of the sauce and freeze the rest or make salsa) Salt & pepper to taste.  fresh cilantro  Method Cooked on meat for 1 hour and 45 minutes, with natural pressure release. Then I shredded it and stuck it in the oven to crisp. Stuck it back in its juices. Made simple tacos with homemade keto tortillas or corn, cilantro, onion, hot sauce, Mexican crema, avocado, cojita cheese and limes.

I ordered a mini Dash. I am so excited to make so many chaffle sammies and desserts. You can do it on any waffle maker.  My first chaffle! Everything I dreamed of! Recipe: 1 egg 1/2 cup mozzarella 1 tbsp almond flour 1/4 tsp baking powder 1 tsp sesame seeds Pinch of onion powder Hamburger patty with cheese(cooked) Onion Mustard Mayo Method: Mix together. Put a little grated cheddar on Dash than a a tablespoon of batter. I wait 3 minutes. Ignore the light. How you like yours depends how long.  I tripled recipe to make 3 burger chaffles. Keto Oreo Chaffles

You could consider making: A buttercream frosting  – 2 tbsp butter, 1 tbsp powdered sweetener, 1/4 tsp vanilla or, A cream cheese frosting  – 2 tbsp cream cheese, 1 tbsp powdered sweetener, 1/4 tsp vanilla INGREDIENTS CHOCOLATE CHAFFLE 1 Egg 1 1/2 tbsp Unsweetened Cocoa 2 tbsp Lakanto Monkfruit, or choice of sweetener 1 tbsp Heavy Cream 1 tsp Coconut Flour 1/2 tsp Baking Powder 1/2 tsp Vanilla FILLING Whipped Cream (alternate frosting recipe in notes below) INSTRUCTIONS Preheat mini waffle maker. In a small bowl, combine all chaffle ingredients. Pour half of the chaffle mixture into the center of the waffle iron. Allow to cook for 3-5 minutes. Carefully remove and repeat for second chaffle. Allow chaffles to sit for a few minutes so that they crisp up. For filling, we like it simple and just went for whipped cream. See notes below for alternate filling. NOTES We preffered a simple frosting for this and simply used whipped cream. However

Instant Pot Chicken and Cauliflower Rice Soup

Ingredients 1 tbsp olive oil 1 medium onion, chopped 3 medium carrots, peeled and sliced 3 celery stalks, sliced 2-3 garlic cloves, minced 1½ pounds boneless skinless chicken breasts 1 tsp dried thyme 1 ½ tsp dried parsley 5 cups homemade chicken broth or stock 2 cups cauliflower florets, riced 2 tbsp chopped fresh parsley salt and black pepper, to taste Directions Press the SAUTE button on the Instant pot and let stand until screen reads “HOT”. Add the olive oil. Add the onion, carrots and celery and cook, stirring occasionally for 2-3 minutes. Add the garlic and cook for 30 seconds. Press the CANCEL button. Add the chicken, dried thyme, dried parsley and chicken broth and mix to combine. Close and seal the Instant pot. Turn the venting knob to SEALING. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display. Adjust the timer to 8 minutes. Keto Pizza Chaffles

First, you need the handy-dandy  Dash waffle maker .  We ordered ours on  Amazon.com  because I am not a fan of Target.  This cute little kitchen gadget comes in teal, pink, red, and black. Becareful because the grey ones are double the price. I chose me the silver/black.  INGREDIENTS 1 egg 1/2 cup mozzarella cheese, shredded Just a pinch of  Italian seasoning No sugar added pizza sauce (about 1 tablespoon) Top with more shredded cheese, pepperoni (or any of your favorite toppings) Volume 90% KETO PIZZA CHAFFLE RECIPE INSTRUCTIONS Preheat the  Dash waffle maker . In a small bowl, whip the egg and seasonings together. Mix in the shredded cheese. Add a tsp of shredded cheese to the preheated waffle maker and let it cook for about 30 seconds.  This will help to create a more crisp crust. Next, add half the mixture to the waffle maker and cook it for about 4 minutes until it’s golden b
