“Paleo-fied” Pumpkin Pie Bars Posted by http://cleaneatsinthezoo.com/index/2012/09/20/paleo-fied-pumpkin-pie-bars/ Recipe: “Paleo-fied” Pumpkin Pie Bars Pumpkin mixture: 1 (15 oz) can pureed pumpkin (nothing added) 1/4 cup honey or pure maple syrup 1/4 cup full-fat, unsweetened coconut milk 1 egg 3/4 tsp cinnamon dash salt Crust: 2 cups almond flour 1/4 cup tapioca flour or arrowroot 1/4 tsp salt 1/4 tsp baking soda 1/4 cup honey or pure maple syrup 1 tsp vanilla 1/2 cup coconut oil, melted Preheat oven to 325 degrees and grease an 8×8 pan with coconut oil. In a medium bowl, mix together all the pumpkin mixture ingredients. Set aside. In a large bowl, combine all the crust ingredients. Press the crust into the greased pan and pour the pumpkin mixture on top. Bake in oven for 40-45 minutes, or until pumpkin is set. Remove and cool a bit, then place in refrigerator and chill for at least an hour, cut into squares and enjoy! Note: For best results, store in refrigerator. PAID ENDORSE…

I used 4 cups of cooked pumpkin flesh, go ahead and add more for a thicker soup.1 tbsp of ghee or grass fed butter.2 medium carrots, peeled and chopped roughly.1 small bartlett pear, peeled, cored, and chopped.4 cups of chicken stock.1 can of coconut milk.2 tsp cumin.2 tsp cinnamon.1 tsp ground ginger.1/2 tsp red pepper flakes (optional). Tools you need:4 to 6 quart slow cooker.Baking pan with 1/2 cup water.Immersion blender, blender, or food processor. How you make it:Preheat your oven to 350°F.Carefully cut the top off of your pumpkin and then cut it in half. Large serrated knives can be easier. Creamy Paleo Bacon Pumpkin Soup Makes 8 Servings Ingredients: 8 oz pancetta or bacon 2 cups chicken broth 29 oz canned pumpkin 2 14 oz cans of full-fat coconut milk ½ tsp ground ginger ½ tsp kosher salt ½ tsp ground cloves fresh sage, chopped {optional} Directions: Crisp the pancetta or bacon in a large pot. Remove the bacon and set aside. Add the broth, pumpkin, coconut milk from 1 and ¾ cans, ginger, salt, and cloves. Let it simmer on medium/low for 15 minutes.
