Place the diced sweet potato in a pan of boiling water and cook for 10-12 minutes or until tender, then drain.
Meanwhile prepare your salad ingredients and begin placing them into your serving bowl, placing each set of ingredients in a ‘cake slice’ area next to each other until the bowl is filled. Add the sweet potato last.
Place a few sprigs of parsley into the center of the bowl to serve.
