 Food Matters breakfast wrap!
4 ingredients, 6 minutes and you'll have yourself a healthy and delicious breakfast to enjoy at the table or take with you on the run.
STEP 1: Whisk together 2 free-range, organic eggs with a handful of chopped parsley, sea salt and pepper.
STEP 2: heat a non-stick, preferably teflon-free pan to medium heat. Add a small amount of coconut oil or butter. Pour the egg mixture into the pan and cook for 1-2 minutes before flipping the omelette to cook the other side. Remove from heat and transfer to a plate or board to slightly cool.
STEP 3: Place one nori sheet on a bamboo mat (sushi mat). Cut a strip off the top and bottom of the omelette and use these extra pieces for the ends. Add sliced avocado and perhaps some baby spinach if you have some.
STEP 4: Wet the tips of your fingers and run a little water along the top edge of the nori sheet. Roll up your wrap and you have a delicious and nutrient rich breakfast. Enjoy!
