Strawberry Banana Muffins
5 TBS coconut flour
¼ tsp baking soda
¼ tsp unrefined sea salt
3 pastured eggs
1 banana, mashed
¼ cup real maple syrup OR raw honey
¼ cup coconut oil or ghee , melted
1 tsp vanilla extract
1 cup fresh strawberries, chopped into ½ inch pieces...
Preheat oven to 350'F and line muffin pan with muffin liners . Sift together coconut flour, baking soda, and sea salt in a small bowl. Set aside. In another medium bowl, whisk eggs until foamy. Add mashed banana, sweetener of choice, fat of choice, and vanilla. Mix until thoroughly combined. Add dry ingredients and mix to combine. Fold in strawberries. Fill 9 muffin liners about ⅔ full. Bake for 20-22 minutes, or until the muffins are firm in the center and golden brown.
