Easiest Coconut Chicken Crock Pot Recipe

2lbs boneless, skinless chicken breast
8 cloves garlic (more or less depending on your taste)
1 TBSP Himalayan Salt
1 TBSP black pepper
1 small can diced chili peppers
2 cups Coconut Milk or Cream
2 TBSP tapioca flour(*optional for thickness*)
2 cups shredded carrots
2 cups diced celery
1 cup diced onion
4 cups spinach lettuce
8-10 small purple potatoes, split in half
Directions:
Combine all ingredients except for the almond meal.  Cook in your Crock Pot or a large pot on low for 5-6 hours.  Before serving, combine the almond meal for extra thickness.  This goes great served hot on top of a large bed of spinach leaves.  Enjoy!
