Vegan RAW Pad Thai




3/4 large Zucchini,spiralized or julienned
1 c carrots,julienned
3/4 Large red bell pepper,julienned
4 green onions,chopped small
1 c Edamame Or 2 oz small shrimp
1 c Red Cabbage,sliced into ribbons
small handful of cilantro leaves
1 T Sesame Seeds
1 t black pepper

Ingredients for the Sauce:
1/3 cup RAW almond butter
2 1/2 T Coconut Aminos or Tamari
2 1/2 T water
1/2 Lime,juiced
2 T Maple Syrup
1/2 t Sesame Oil
1 T Sriracha
Few drops of fish sauce

Directions:
Prep your veggies. Throw all the veggies in a bowl. Save some of the green onions for the top. Add your sesame seeds and black pepper to the veggies and mix well. I do it with my hands.  Make your sauce. I have even tried this with tahini instead of almond butter and it was really good too. You can mix the sauce in or serve on the side. Top with sesame seeds and additional green onions
