Easy Chicken Salad

Chicken Salad
When you have leftover chicken from a previous recipe or dinner, this is a great meal to put together! It’s full of protein and healthy fats, requires little work and uses your left overs! You can also make it with fresh chicken as well.

Chicken Salad Recipe

Total Time: 5 minutes
Serves: 4

INGREDIENTS:

  • 3-4 c. leftover, cooked chicken (cage free or organic)
  • 2-3 c. coarsely diced celery
  • 1 c. sliced red grapes
  • 2 tsp. lemon juice
  • 2/3 c.  Homemade Mayo
  • 1/4 c. coarsely chopped walnuts
  • Sea Salt and Black Pepper to taste

DIRECTIONS:

  1. Shred or cut chicken into small pieces and mix all ingredients in a bowl until combined.
