Potato Soup
Soups need not be complicated and time-consuming! This dead simple, hearty and nutritious potato soup can stand alone as a satisfying meal.

Ingredients
4 large potatoes
1 cup celery, chopped
1 cup leeks, chopped
2 cups dairy milk or almond milk
water
1 bay leaf
salt and pepper
Directions
Rinse potatoes and chop up into 1″ cubes. Feel free to peel if you’d like!
Dice up celery and leeks and place in pot with potato cubes.
Add enough water into pot to just about cover the vegetables. Throw the bay leaf in there, too.
Bring water to boil. Reduce heat to simmer and cover pot, cooking for about 20 minutes, or until vegetables are tender.
Mash the potatoes with a potato masher, or leave as large chunks. Whatever consistency you prefer!
Pour in milk and simmer for 5-10 minutes.
Add salt and pepper to taste.
Serve it up!
