Wheatberry Salad
Wheat berries are full of nutrition and this salad is truly filling and enjoyable!
Ingredients
- 1 Cup Wheat Berries
- 1 Apple, cored and finely chopped
- 3/4 Cup Dried Cranberries,
- 1 Rib of Celery Heart, finely chopped
- 2 Scallions, trimmed and snipped
- 1/3 Cup Cider Vinegar
- 1 Teaspoon Honey
- 1 Teaspoon Honey Mustard
- Pinch of salt and pepper
- 3 Tablespoons Olive Oil
- 1/2 Cup Feta Cheese Crumbles (optional)
Instructions
- In a large bowl, combine wheat berries and enough water to cover them by two inches. Soak overnight.
- Drain wheat berries and add them to a medium sized sauce pan. Add 3 1/2 cups water and bring to a boil. Reduce heat and simmer for 45 minutes adding water if needed.
- Drain and cool.
- In a large bowl combine apple, cranberries, celery, and scallions. Add the wheat berries and toss gently.
- In a small bowl, whisk together cider vinegar, honey mustard, honey, salt and pepper. In a slow stream, add olive oil to the mixture while whisking to create an emulsion. Pour the dressing over the salad mixture and toss lightly to combine. Serve and enjoy!
