Cauliflower Mashed Potatoes With Kale & Bacon

Cauliflower Mashed Potatoes With Kale & Bacon 


Ingredients:
  • 1 Large Head of Cauliflower, chopped into florets
  • 3 oz. or half a 6oz. container FAGE Total 0% Plain Greek Yogurt
  • 1 or 2 cloves Garlic, minced
  • 2 1/2 Tsp. Chicken Base or 2 crushed  Chicken Bouillon Cubes
  • Sea Salt and Pepper
  • 1 bunch of Kale, ribs removed & sliced or a large handful of Spinach, chopped
  • 2 strips of Bacon crumbled
  • 1/2 Cup Grated Parmesan (optional)
  • Fresh Parsley chopped
Directions:
  • Place cut cauliflower in large pot and fill with enough water to cover.
  • Bring to a boil, reduce heat, and simmer until cauliflower is tender, for about a hour, or until well done, and soft.
  • Drain the cauliflower, then add yogurt, garlic, bouillon, salt, pepper
  • Use a hand or immersion blender to mash and combine ingredients.
  • Add Parmesan and stir in cooked kale or spinach & bacon.
  • Place in serving bowl or into individual bowls.
  • Make an indentation on the top of the potatoes and place a small amount of butter if desired.
  • Sprinkle with chopped parsley.
  • Serve

  • Onions, chopped fine
  • Chives
  • Real Butter, to taste
