Simple Pork Stew

What you need:

  • 3lb (1.3 kg) pork (such as hamor tenderloin), (cubed)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 25-30 champignon mushrooms
  • 1 cup (2.5 dl) olives
  • 2 cups (5 dl) crushed tomatoes
  • 4 tablespoons tomato paste
  • 1 tablespoon dried sage
  • 1 bay leaf
  • 0.5 tablespoon black pepper (fresh, coarsely ground)
  • 1 teaspoon salt
  • clarified butter / ghee (for frying)

What to do:

1Melt the clarified butter in a dutch oven.
2Put all spices in a mortar and grind until the bay leaf is pulverized.
3Place the cubed pork and spices in the dutch oven and quickly give it some color.
4Add the chopped onion, minced garlic, mushrooms, and tomato paste and fry for a few more minutes.
5Add the crushed tomatoes, reduce the heat a bit and let simmer for 45-60 minutes.
6Towards the end, add the olives.
7Serve, eat and enjoy!
