Birthday Cake Cheesecake

INGREDIENTS
- 1 1/2 c. Heavy cream, whipped
- 12 oz. cream cheese, softened
- 1/2 c. RAW sugar or honey
- 1 c. birthday cake mix(gluten free)
- 1 graham cracker pie crust, store-bought or homemade or nut crust
- Rainbow sprinkles, for decorating
DIRECTIONS
- In a large bowl, combine whipped heavy cream with softened cream cheese and sugar and stir until completely combined. (If cream cheese clumps remain, transfer mixture to a stand mixer or use a hand mixer.
- Fold in birthday cake mix.
- Pour mixture into prepared pie crust, smoothing over top with a rubber spatula. Top with sprinkles, cover with plastic wrap, and refrigerate until firm, at least 4 hours.
