Process
  1. Heat oven to 350°F.
  2. Sprinkle the chicken thighs generously with salt and pepper. Heat coconut oil in a large skillet over medium-high heat. Sear the chicken thighs on both sides until browned; transfer to a plate.
  3. Sautée onion and garlic in the same skillet 2-3 minutes, transfer to a baking dish, add chicken thighs on top.
  4. Combine the remaining ingredients in a small bowl. Spoon over the chicken thighs. Cover the skillet tightly with foil and bake for 30 to 40 minutes, or until chicken is tender.
