Pan Seared Steak and Mushroom Sauce

Ingredients:
4 Eye of Round Steaks 1 inch thick
4 tbs Butter... divided
Salt and Pepper
1 lb Mushrooms. .. sliced
1 can Refrigerated Coconut Milk. ..Cream only
3 Garlic Cloves. ..pressed
1/8 cup Fresh Parsley. .. chopped

Season steaks generously with salt and pepper on both sides. Cook steaks in 2 tbs of butter for about 8 minutes each side or until desired doneness.
Meanwhile in a separate skillet... Saute mushrooms with remaining butter and garlic until browned and cooked through.
Open can of coconut milk and pour out the liquid. .. saving for a future recipe or smoothie. Scrape the solid cream out into the skillet with mushrooms and add parsley. Simmer 5~10 minutes stirring occasionally. Season with salt and pepper.
Serve mushrooms and sauce over steaks.
