1 small Zucchini...shredded (about 1 heaping cup) 1 ½ cup Almond Flour 1/2 cup Chopped Walnuts 1/2 cup Chocolate Chips 1/4 cup Coconut Flour 1/4 cup Cacao Powder 1 tsp Baking Soda 1 tsp Salt 4 eggs 1/2 cup Enjoy Life Chips 1/4 cup Honey 1/4 cup Coconut Oil...melted 2 Tbs Almond Butter 1 tsp Vanilla
In one bowl, whisk almond flour, coconut flour, cacao, walnuts, chocolate chips, baking soda and salt together until well blended.
In a separate bowl, whisk together eggs, honey, coconut oil, almond butter and vanilla. Add in the dry ingredients and mix well. Fold in the shredded zucchini.
Grease muffin tins and spoon in the batter until 3/4 full. Or lightly grease 8x5 glass baking dish and pour batter into that.
For muffins...Bake for 25 minutes or until toothpick comes out clean. Cool completely before serving.
For loaf...Bake 35-40 minutes or until toothpick comes out clean. Cool completely before serving
