Spicy Sweet Potato & Egg Scramble

Ingredients:
1 small or medium sweet potato
2 eggs
1/2 cup chopped spinach
1- 2tbsp coconut oil
1/2 tsp curry powder
1/2 tsp paprika
1/2 tsp chili powder
2 tbsp Whole30 compliant hot sauce
Dash ground pepper
Dash red pepper flakes

How to make:
-Peel and cut up sweet potatoes into small cubes
-Put sweet potatoes in mixing bowl & add 1 tbsp coconut oil, curry powder, paprika, & chili powder. Mix ingredients.
-Heat stovetop pan to medium with a bit of coconut oil. Once warm, add the mix of sweet potatoes & cover for about 5 minutes to let potatoes soften from the steam. When the 5 minutes are done, take off cover and let them brown/crisp for about 5 minutes. -In another mixing bowl, whisk the 2 eggs with a little ground pepper.
-Add in a little coconut oil to another pan (medium/low heat), add in chopped spinach, let cook for about a minute, & then add in eggs to scramble. Keep moving egg mixture around to evenly scramble.
-Put sweet potatoes & egg scramble on plate or bowl & top with a sprinkle of red pepper flakes, tomatoes, avocado, & hot sauce (check your ingredients).
-Enjoy!
