Breakfast Salmon Scramble

Herb & Salmon Scramble

Ingredients

  • 2-4 Free Range Eggs
  • 80-100g (3-4 Ounces) Tinned Wild Caught Red Salmon
  • 1 Cup Broccoli or Broccolini (chopped into small florets)
  • ¼ Cup Fresh Parsley (finely chopped)
  • 1 Tbsp. Fresh Dill (finely chopped)
  • 1 Small Red Onion (finely chopped)
  • 10 Small Sour Gherkins/ Dill Pickles (chopped)
  • Rock/ Sea Salt and Freshly Cracked Black Pepper
  • Coconut Oil

Cooking Steps

METHOD
1. Whisk eggs and add herbs, onion, salt and pepper.
2. Heat some coconut oil in a fry-pan and pour in egg mixture.
3. Evenly break up Salmon and place on top of egg mix along with the broccoli and pickles.
4. Cover and cook on low until the eggs are cooked through.
5. Scramble with a fork, add salt and pepper to taste and serve.
