Chimichurri Chicken Salad

Chicken Salad (No Mayo Involved!) www.aunaturalenutrition.com
3 or 4 organic cooked chicken breast,chopped
3 stalks of celery chopped
1/2 yellow onion,chopped
1/4 cup of peeled cucumber,chopped or pickle relish
1/4 cup of chimichurri (recipes on this blog)
sea salt and pepper to taste

Mix all together and store in fridge.Great on lettuce leaves or pickle slices.


Chimichurri Sauce:


2 Sprigs of Thyme Leaves
2 cloves garlic
3/4 cup plus 2 tablespoons extra-virgin olive oil 
1/2 cup fresh lemon juice and lemon rind grated
Kosher salt and freshly ground pepper 
2 cups fresh flat-leaf parsley leaves 
1 cups fresh mint leaves 
crushed red pepper

blend all of this in food processor.
