Paleo Seafood Paella

Paella is such a great one-pot dish that can be altered for different taste preferences. My Mixed Seafood Paella has seafood as well as sausage and chicken, but you can make it with whatever meat, fish, or veggies you'd like.
1½ cup chicken broth
1 cup clam stock
6 littleneck clams
6 mussels
½ pound jumbo shrimp
2 tablespoons extra virgin olive oil
6 ounces chorizo sausage
2 chicken thighs
1 medium yellow onion
2 cloves garlic
2 roma tomatoes
2 teaspoons sea salt
1 teaspoon saffron threads
¼ teaspoon smoked paprika
¼ teaspoon cracked pepper
1 head cauliflower
¼ cup fresh parsley
lemon wedges for garnish
