Veggie Burger
Ingredients:
2 tablespoons of olive oil
2 cloves of garlic minced
1 small onion - grated
1 squash - shredded
... 1 zucchini - shredded
1 small red bell pepper - small diced
1/2 cup shredded cheese
1/4 cup flour
1 1/2 cups quick oats
1 egg - beaten
1 cup flour
Sliced cheese - your choice
salt and pepper to taste
Directions:
Heat 2 tablespoons of olive oil in a large pan over medium low heat. When the oil ripples add the onion and garlic and saute about 5 minutes, or until soft with a golden color. Add the rest of the veggies and cook for 2 - 4 minutes. Drain the water out. Now here you can transfer everything to a stand mixer if you have it. You don't have to but it makes it much easier to mix.
Put the veggies into the mixer with a paddle attachment. Start the mixer on low and add the cheese, oats, flour and egg. Mix until completely combined. Move bowl to the fridge and chill for at least 1 hour. This is a must! Next time I am going to chill overnight since I am always rushing to make this.
When the mix is completely cooled down divide into 6 portions of balls. Roll each ball in the flour and press into patties. Place into a hot pan until a nice crust is formed and the veggies are heated through. Top with your favorite sliced cheese.
You can mix this up with different cheeses, and I even cooked the veggies in jalapeno oil for a little kick. The most important thing is to chill the veggies completely! These also freeze really well and can be heated in the microwave.

Thank You Angela...The ingredients sound so great. Although for us paleo peeps I will be subbing flour for coconut flour or almond flour.
