Salmon Salad Supreme

Makes 2 meal-sized portions | Gluten free and dairy free

7.5 oz. can water-packed salmon, drained
½ c. celery, diced
2 T. green onion, chopped or Purple onion sliced
½ c. frozen peas
½ c. frozen or canned corn
1 hard-boiled egg, chopped
5 large ripe olives, sliced
3 T. mayonnaise
2 tsp. dried basil leaves
2 large Bibb or romaine lettuce leaves

Combine all ingredients in a large bowl.
Divide into 2 portions and serve over 2 large lettuce leaves.
