Twice Baked Breakfast
INGREDIENTS
4 Eggs
2 small Sweet Potatoes
1 small Onion…chopped
1 Wellshire Farms Smoked Chorizo Sausage
1 Garlic Clove…minced
¼ tsp Smoked Paprika
½ tsp Italian Seasoning
PREHEAT 425
Bake potatoes for about 45 minutes or until fork tender. Set aside to cool.
While potatoes are baking, brown sausages in a skillet with olive oil. When sausages are cooked through, remove from skillet and set aside.
In the same skillet, adding more oil if needed, saute your onions with garlic until golden brown. Remove and place into a bowl.
Slice the potatoes in half, gutting out the middles, and leaving a half inch wall around the edge. Place the scooped out potato into the bowl with the onions.
Cut sausages into small bite size and add to bowl with sweet potato.
Season contents of the bowl with paprika, Italian seasoning, salt and pepper. Mix well.
Return potato mixture to the shells, and create a divot with the back of a spoon. Place an egg in each potato half. Return potatoes to oven and bake for 10 minutes or until egg is cooked the way you prefer.
