Leftover Turkey Stuffing Balls

Ingredients

  • 2 cups leftover turkey stuffing: opt for sourdough bread
  • 1 cup cooked, shredded turkey: Use skinless turkey breast for lower fat content.
  • 1 egg: Acts as a binder and adds a protein boost.
  • 1/4 cup finely chopped onions: Adds flavor and texture.
  • 1/4 cup finely chopped celery: Adds crunch and additional nutrients.
  • 1/4 cup grated low-fat cheese: Optional, for added flavor and moisture.
  • 1/4 cup fresh parsley, chopped: Provides a fresh, herbal note.
  • 1/2 teaspoon garlic powder: Enhances the overall taste.
  • 1/2 teaspoon dried sage: Complements the stuffing flavor.
  • 1/4 teaspoon black pepper: Adds a bit of heat.
  • 1/2 teaspoon salt: Adjust to taste, but consider using less to keep sodium levels in check.
  • Cooking spray: For baking the stuffing balls without added fat.

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that your stuffing balls will bake evenly and achieve a crispy exterior.
  2. Prepare the Ingredients: Gather all your ingredients and ensure your leftover stuffing and turkey are well-prepared. The turkey should be shredded into small pieces, and the stuffing should be slightly moist but not too wet.
  3. Mix Ingredients: In a large mixing bowl, combine the leftover turkey stuffing with the shredded turkey. Add the chopped onions, celery, and parsley to the mixture. If using, stir in the grated low-fat cheese. Mix until all ingredients are well incorporated.
  4. Add Seasonings: Sprinkle in the garlic powder, dried sage, black pepper, and salt. Mix well to ensure the seasonings are evenly distributed throughout the mixture.
  5. Bind the Mixture: Crack the egg into the bowl and mix thoroughly. The egg acts as a binder, helping the stuffing balls hold their shape during baking.
  6. Form the Stuffing Balls: Using your hands or a small cookie scoop, form the mixture into 1-inch balls. Place each ball onto a baking sheet lined with parchment paper or lightly coated with cooking spray.
  7. Bake the Stuffing Balls: Spray the tops of the stuffing balls lightly with cooking spray. This helps them crisp up during baking. Place the baking sheet in the preheated oven.
  8. Bake Time: Bake the stuffing balls for 15-20 minutes, or until they are golden brown and have a crisp exterior. Make sure to turn them halfway through the baking time to ensure even cooking.
  9. Cool and Serve: Once baked, remove the stuffing balls from the oven and let them cool for a few minutes on the baking sheet. Serve warm.

Tips and Variations

  1. Gluten-Free Option: If you need a gluten-free version, use gluten-free stuffing mix and ensure all other ingredients are gluten-free.
  2. Vegetable Additions: You can add other finely chopped vegetables, such as bell peppers or carrots, to increase the nutritional value and flavor.
  3. Spice Variations: Experiment with different spices such as paprika or thyme to vary the flavor profile of the stuffing balls.
  4. Serving Suggestions: Serve these stuffing balls as a main dish with a side salad or as a healthy appetizer. They also pair well with a low-fat gravy or cranberry sauce.
