Roasted Corn Salad

Avocado, Tomato & Corn Salad

Ingredients

  • 1 1/2 cups corn (cut from 2-3 ears or frozen/thawed)
  • 2 teaspoons grapeseed oil
  • 2 avocado (peeled and diced)
  • 1 pint cherry tomatoes (halved)
  • 1/2 cup diced red onions
  • 1 lime (juiced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Put oil in a pan and saute corn in oil for 10 minutes.  Than add the rest of the veggies and a teaspoon of the oil and toss. Chill and serve on spinach! This is soooo good. You can also wrap it up in a sprouted tortilla with hummus and spinach a perfect meal!
