Soboro Beef (Garlicky Ground Beef)

 


INGREDIENTS

  • 1 pound ground beef, 80/20 ratio
  • 2 tablespoons garlic, minced
  • 2 green onions, chopped
  • 1 carrot, diced
  • 1 onion, diced
  • 3 tablespoons soy sauce
  • 2 tablespoon mirin
  • 2 tablespoons pear juice
  • 2 teaspoons ginger powder

INSTRUCTIONS

  1. Cut the carrots and onion into a small dice. Chop the green onions and mince the garlic. Set them aside.
  2. In a bowl, combine the soy sauce, mirin, pear juice (alternatively use agave, sugar, or sweetener of choice), ginger powder (or grated ginger), and minced garlic. Set it aside.
  3. Heat some neutral oil in a skillet on medium-high heat. Add the ground beef to the skillet and use a wooden spoon to break it up into smaller crumbles. Brown the ground beef for 1-2 minutes.
  4. Add the chopped green onions, carrots, and onions to the skillet.
  5. Add the sauce to the beef and stir to combine. Continue to cook until the beef has absorbed all the sauce and the beef is evenly browned, or no longer pink.
  6. Serve the soboro beef over rice. Garnish with chopped green onions, sesame seeds, and a fried egg!
