Middle Eastern Beef Stew Recipe

Ingredients:

  • Beef stew meat (cubed)
  • Tomato paste (about 2 tablespoons)
  • Leeks (1–2, sliced)
  • Carrots (2–3, peeled and chopped)
  • Potatoes (2–3, peeled and cubed)
  • Onions (1 large, chopped)
  • Turnips (optional, peeled and diced)
  • Garlic (3–4 cloves, minced)
  • Ground cumin (1 teaspoon)
  • Ground coriander (1 teaspoon)
  • Ground cinnamon (1/2 teaspoon)
  • Ground turmeric (1/2 teaspoon)
  • Ground paprika (1/2 teaspoon)
  • Salt and pepper (to taste)
  • Olive oil (2 tablespoons)
  • Beef or vegetable broth (about 4 cups)
  • Fresh parsley or cilantro (for garnish)

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onions and minced garlic. Sauté until the onions are translucent.
  3. Add the beef stew meat and brown it on all sides.
  4. Stir in the tomato paste, ground spices (cumin, coriander, cinnamon, turmeric, and paprika), salt, and pepper. Mix well to coat the meat.
  5. Add the sliced leeks, chopped carrots, cubed potatoes, and diced turnips (if using). Stir to combine.
  6. Pour in the beef or vegetable broth. Bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked.
  8. Taste and adjust the seasoning if needed.
  9. Serve the stew hot, garnished with fresh parsley or cilantro & diced cucumber. Serve over riced cauliflower.
