Vitamix Instant Vegan Pumpkin Soup


 
It is the last day of our official Vitamix Recipe Center celebration, and we end with this fabulous Instant Vegan Pumpkin Soup. I say "instant" because this recipe utilizes canned pumpkin. Now, normally I don't use canned vegetables in any of my recipes. However, this recipe is a healthy lifesaver if you come home and don't have much in your fridge! You can whip up this tasty meal with ingredients in your panty in minutes.

I also thought it timely that I post this this recipe leading into the holiday season as it is a fantastic way to use those leftover cans of pumpkin. Making soups in your Vitamix is so quick and easy! Check out my Soups Video on the Vitamix website.

Vitamix Instant Vegan Pumpkin Soup

  • 1 cup (240 ml) vegetable broth
  • 1/4 cup (60 ml) unsweetened coconut milk
  • 1 1/2 cups (368 g) canned organic pumpkin
  • 1/2 cup (58 g) sliced onions, sautéed
  • 1 1/2 garlic cloves, roasted
  • 1 1/2 Tbsp coconut sugar
  • 1/2 tap ground paprika (optional)
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tsp freshly ground nutmeg
  • salt and freshly ground black pepper, to taste
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 6-7 minutes or until heavy steam escapes from vented lid.
  5. Garnish with toasted pumpkin seeds.

If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
