Vegan Ultimate Breakfast Toast

Ultimate Vegan Breakfast Sandwich on an English muffin - from the Vegan Weight Loss Manifesto

INGREDIENTS;

2 TB coconut oil
1/2 large onion, chopped
2 cloves garlic
8 organic button mushrooms
1 tsp oregano
sea salt and fresh pepper
small bunch of cilantro leaves
1/2 avocado, mashed
handful of spinach added with the shrooms(optional)
2 Sprouted English muffins
Homemade Ketchup below

DIRECTIONS:

Heat a skillet to medium heat and add the oil. Than add the onion and saute till tender, about 5 minutes.  Add the garlic and saute for another minute. Add the tomato, shrooms, spices saute till all of it carmelizes about 10-15 minutes.
Add in the chopped cilantro for another stir. Turn the heat off and set the skillet aside. Spread the mashed avocado over the toasted muffins. Top with half the shroom mixture. and other veggies of your choice. Finish it with drizzle of the ketchup and crushed red pepper. I like it spicy. But enj0oy this for lunch too!

KETCHUP:

1/4 cup sun dried tomatoes
small clove garlic
1 inch piece of ginger
1 TB balsamic vinegar
3 dates, pitted
1 cup cherry tomatoes

In a high speed blender blend till creamy.
