Keto Brownie Bites

 


Ingredients
▢1 cup almond flour
▢1 cup unsweetened cocoa powder
▢½ teaspoon salt
▢1 teaspoon baking powder
▢½ cup butter melted
▢2 large eggs
▢⅔ cup low carb sugar substitute
▢1 teaspoon vanilla extract
▢¼ teaspoon xanthan gum optional but recommended
▢¼ cup keto chocolate chips
Optional Toppings
▢¾ cup keto white chocolate chips melted or dark chocolate
▢1 ChocZero Peppermint Bark Candy chopped optional
Instructions
1. Preheat oven to 350°F. Grease 24 mini muffin molds.
2. Blend together all ingredients in a medium mixing bowl just until combined.
3. Divide batter evenly between the greased mini muffin molds.
4. Bake 12 to 15 minutes or until desired doneness has been reached.
5. Allow brownie bites to cool in pan on rack for 10 to 15 minutes then remove from pan and cool completely.
If desired, spoon about ½ teaspoon melted white chocolate on top of each bite then sprinkle on chopped peppermint chocolate bark. Allow chocolate to harden before serving.
