Zuzka's Halibut Ceviche Salad

I bought a little over 1/2 lb of fresh Halibut fillet which should be enough for 2 portions. For the first part of this recipe you'll need the fish, 1 lemon, and 1 lime.
Chop the Halibut in small cubes. The smaller the cubes the faster they'll "cook" in the lime and lemon juices. The protein actually really changes it's structure and cooks in the marinade, however it does not kill bacteria like cooking with heat. You have to make sure to pick really fresh meat.
Place the cubes in a glass container and pour over the lemon and lime juice. It should be at least 1/2 a cup. Make sure that the meat is covered in the juices, then cover the whole container with plastic wrap and place it into the fridge for at least 2 hours.
Take the halibut cubes out of the fridge and pour out the lemon and lime juice. You can strain it, like I did, because it's just fast and easy.
Then you'll take about 4 stalks of green onions and chop them into smaller pieces.
Mint is very important in this recipe, because it gives it very refreshing flavor, so take about a handful of mint leaves and chop them finely.
Fresh cilantro is just as important as the mint in this recipe so grab at least a handful and a little more and chop it finely.
Use a garlic press and squeeze 1 clove of garlic over the marinated halibut cubes.
Get some thai chillies, depending on how much do you like spicy food and chop them finely. I used only two because I'm ok with a little spicy. I don't like when food makes me cry 
Mix in all of those chopped ingredients, ad about 1 table spoon of low sodium soy sauce and about 1 teaspoon of sesame seed oil. Also squeeze in fresh juice out of 1 lime, that I forgot to show in the picture. Mix well and put it back into the fridge for another hour to marinate some more.
When you're ready to have your amazing dinner, just take 1 Heirloom tomato and chop it into small cubes. Do the same thing with an avocado, and a sweet pepper. I totally forgot the name of this yummy pepper, however if you can't find it in your store, then regular red bell pepper will do. Slice up the 3 radishes really finely and mix it all in with the marinated halibut.
Prepare the bed of butter lettuce in a medium size bowl.
Fill up the bowl with fresh ceviche salad and then garnish the top with thin slices of red onion.
