Buttery Kimchi Shrimp

  INGREDIENTS ¾   cup roughly chopped kimchi 1 ½   pounds shrimp, peeled and deveined, tails left on (16 to 20 shrimp)   Kosher salt 3   tablespoons unsalted butter 2   garlic cloves, finely chopped 2 teaspoons honey 1 ½   teaspoons finely chopped ginger ½   teaspoon red-pepper flakes (optional) ½   lime, for serving 2   tablespoons roughly chopped cilantro   Flaky salt (optional) PREPARATION In a food processor, pulse the kimchi until it resembles a paste. Season the shrimp with kosher salt. In a 12-inch skillet, melt the butter over medium heat. Stir in the garlic, honey, ginger and red-pepper flakes, if using, and cook until fragrant, about 30 seconds. Add half the shrimp to the pan in one layer and cook undisturbed until they just start turning pink about 1 minute. Flip and cook for about 1 minute more, then remove from the pan and set aside. Keto Broccoli Cheddar Soup with Chicken

  Ingredients 1 tablespoon butter 1/2 cup onion, finely chopped 3 cloves garlic, finely chopped 12 ounces broccoli, finely chopped 32 ounces chicken broth 8 ounces cream cheese 3 cups chicken, cooked and shredded 2 cups shredded cheddar cheese 1/4 cup heavy cream salt and pepper to taste Instructions Melt the butter in a dutch oven or stock pot over medium heat. Sauté the onion and garlic for about 2 minutes until the onions are translucent.  Add the finely chopped broccoli (remember, no big pieces!) and pour in the chicken broth. Stir and cover, reduce the heat to medium low and allow the broccoli to simmer about 15 minutes or until tender.  Stir in the cubed cream cheese, shredded cheddar cheese and heavy cream. Continue stirring until the mixture is smooth and the cheese has melted.  Fold in the shredded chicken and add salt and pepper to taste.

Korean Chicken Salad

Looking for something quick, healthy, and delicious? It doesn't get better than this amazing Asian chicken salad! It's packed with flavor and just a tiny bit of spice to give it that extra kick. This is the perfect side dish for BBQ's, dinners, or just to enjoy as a meal on it's own. Ingredients   1 tbsp soy sauce 2 tbsp olive oil 1 tsp sesame oil 1 tsp lime juice 1 clove garlic, minced 1 tbsp  Korean Chili Sauce 1 tbsp  Honey Glaze Sauce 1/2 cabbage, shredded 1 medium cucumber, julienned 1 medium carrot peeled, julienned 1 cup cilantro, chopped 2-3 green onions, sliced 2 cups shredded chicken breast (cooked) Directions In a small bowl, combine soy sauce, olive oil, sesame oil, lime juice, garlic,  Korean Chili Sauce , and  Honey Glaze Sauce . Mix well and set aside. In a large bowl, add cabbage, cucumber, jcarrots, cilantro, green onions, and shredded chicken. Toss thoroughly.
