Steamed Eggs

 



2Large Eggs
1 cupKombu Dashi (or instant, vegetable or chicken broth, or water)
addSalt
1 teaspoonSoy Sauce
1 teaspoonMaple Syrup
1 tablespoonScallion Greens (or finely snipped chives, for garnish, optional)


Mix together the shiro-dashi, eggs, and water or broth, then strain in a tea strainer to create the egg mixture. Add soy, syrup, and scallions. You can add cooked ham, tomatoes, spinach. Anything!

Add the filling ingredients to the mugs, then gently pour the egg mixture in. Wrap lightly. Then micro at 1;30 in intervals on a low watt micro...Mine is 700. 

When it is souffle like. Pull it out let it set for a few minutes. Than enjoy with chives and chili oil.
