Zuzka's Slow Cooker Butternut Squash & Chicken Stew
Here are the ingredients:
1/2 of Butternut squash, 1 can of unsweetened coconut milk, 1 1/2 tablespoon low sodium soy sauce, 1 large sweet potato, 1 large yellow onion, about 6 stalks of green onions, 3 thai chillies, 1 large portobello mushroom (or 1 cup shiitake mushrooms), bunch of fresh cilantro, salt, 1 cup chicken broth, and chicken breast if you are a meat eater.
Start by chopping the butternut squash into small cubes. Don't peel it.
Save the bottom half of the butternut squash for another recipe. There are a lot of awesome recipes that you can use the bottom for. I think I am going to make a soup or maybe a sweet dessert.
Peel the sweet potato and chop in smaller cubes as well.
Cut the mushrooms first into 1/4 inch thick slices and then into smaller cubes. I didn't have shiitake mushrooms, otherwise I would have used those. Nevertheless, it still turned out to be delicious.
Peel and chop the onion coarsely.
Seed the tiny Thai chillies and chop them very finely.
Divide the white and green parts of the scallions and save the green parts for garnish.
Mix the coconut milk with soy sauce and whisk it together.
Add the chicken broth into the coconut milk.
Place all of the chopped and mixed veggies into the slow cooker.
Slice the chicken breast into smaller pieces and place them on top of the veggies. Then pour the coconut milk mixture over the top of the chicken and vegetables.
Set the slow cooker on low heat for 4 hours and 30 minutes. This gives you time to do whatever you want! Wasn't it fast and easy??
When the time is up, you want to take 1 medium bowl and take out all of the meat and some of the butternut squash, sweet potatoes, and mushrooms.
You will puree the rest of the veggies in your blender in small batches.
Don't use the leftover juices, only the veggies.
You want the puree to be thick.
Then add the chicken and all of the chunks of the butternut squash and sweet potatoes into the puree and salt to taste.
Chop the green onions and cilantro.
Now you can scoop as much as you want into a bowl and garnish it with the cilantro and scallions.
