Homemade Mayo

2 egg yolks (room temperature)
1 tsp ground mustard
1/4 tsp salt
1 tsp lemon juice
1 tsp coconut sugar
1 tsp white vinegar
1- 1 1/2 cups desired oil (traditionally canola, however (heated) coconut and olive oil work)

Beat all ingredients together except for the oil you are using. When those ingredients are well incorporated, very SLOWLY add in the oil as you continue to beat.

*If you are using coconut oil, you DO need to melt it before adding it.
IMG_1255Whip the mixture for 5 to 10 minutes until it is thick and white.
Store in an airtight container. This will last about a week OR longer. It will smell “off” once it goes bad.
