Kale Tacos

Ingredients
- 1 shallot or ½ small onion
- 2 garlic cloves
- 1 tbsp coconut oil
- ½ head of red cabbage
- 1 bunch kale
- ¼ tsp celtic sea salt
- 1 avocado
- ½ cup feta cheese crumbled (optional)
- 1 large tomato seeded and diced
- 2 cups sprouts of your choice
- 1 lime cut into slices
- 6 corn tortillas
Instructions
- Preheat oven to warm tortillas
- In a large skillet, sautee coconut oil, shallots for 2-3 mins on medium heat
- Add garlic and cook another minute or so
- Add salt, black pepper and cabbage and cook for 2-3 mins
- Add kale and cook until slightly wilted and remove from heat
- Assemble tacos by putting the kale and cabbage mixture on a corn tortilla, topped with diced tomato, sliced avocado, feta cheese, sprouts and a squeeze of lime

***Please choose all organic ingredients if possible***
even to step it up a notch saute some mexican chorizo and than add the cabbage and onions and kale....I opted for spinach becaue I am a kaleoholic and I used it all...
