Easy Coconut Flour Cake

*EASY COCONUT FLOUR CAKE*
4 eggs
1 cup of coconut milk or raw milk
2 - 4 tablespoons of raw honey (use more, if you prefer a sweet cake)
2 teaspoons vanilla extract
½ cup coconut flour, preferably sifted
1 teaspoon baking soda
1/8 teaspoon sea salt
coconut oil for greasing baking dish
Preheat oven to 350. Whisk eggs, raw honey, coconut milk and vanilla together. Add coconut flour and allow the batter to sit for about 5 minutes, so the coconut flour can absorb the dry ingredients. Meanwhile, grease your baking dish with coconut oil. I used a 9" glass pie pan. Now, mix in the baking soda and sea salt. Make sure that it is thoroughly mixed. Use a rubber spatula to place the batter in your pie pan. Cook for about 15 minutes (sorry... I didn't really pay attention to the time, so keep an eye on it) or until a toothpick inserted comes out clean.
Enjoy topped with whipped cream or coconut whipped cream.
*NOTES: I have found that coconut flour only baked goods can leave a dryness in your throat. This is eliminated or greatly reduced when it is paired with whipped cream or frosting!
I also didn't make this very sweet, since I was going to top it with whipped cream. I only used 2 tablespoons of honey. If you prefer it sweeter, use more honey.
