Raw Avocado, Cacao, Ginger & Mint Bites
Makes about 20, and there's zero level of difficulty.
2 avocados
1 cup cacao
1/2 cup cacao nibs
1/2 cup coconut sugar (or more depending on desired sweetness)
3 Tbsp coconut oil
1 Tbsp vanilla
1/2–1 cup mint leaves
5 pieces of fresh ginger
2 drops of mint extract (optional)
Pinch Himalayan salt
Coconut, hemp seeds, or cacao nibs (for garnish)
Place all ingredients into a food processor or Vitamix (using tamper as needed), and blend until smooth. Roll into balls, or put into ice trays, and allow to set in the fridge for 20 minutes.
