Cooked Salsa


Ingredients:

  • 56 ounces canned whole tomatoes
  • 8 ounces white onion (finely chopped, ~ 1/2 large onion)
  • 4 ounces jalapeño (finely chopped, 3 medium peppers)
  • 2 cloves garlic (minced)
  • 3 tablespoons apple cider vinegar
  • Juice of a lemon
  • 1 tablespoon kosher salt
  • 1/4 cup fresh cilantro (minced)
  • 1 small can of chipolte peppers in adobo

Instructions:

  1. In a large pot, heat the oil and add the jalapeños, chipolte peppers, garlic, and onion. Sauté until everything is soft but not browned.
  2. Add the tomatoes and cook until the tomatoes are quite soft and starting to pack down in the pot, about 5 minutes.
  3. Add the remaining ingredients and cook for about 10 minutes more to give the flavors a chance to mix together and the water to boil off.
  4. When the salsa is as thick as you like it, add salt to taste if needed and let stand for at least one minute.
  5. Stir well before serving.
