Why You Should Put Eggs On Your Salad
Nothing makes a dish like topping it with an egg. Well, you now have science-backed permission to do exactly that. It's actually really good for you.
According to a new study published in the American Journal of Clinical Nutrition, eating eggs with your vegetables helps you better absorb their nutrients.
The researchers had male volunteers eat different versions of a mixed-vegetable salad: one with no eggs, one with 1.5 eggs, and one with three. Their goal was to see how well the men absorbed carotenoids — a type of antioxidant — from the salad.
They found that the men who ate the salads with eggs had higher levels of carotenoids in their system. And while the the effect was higher in men who ate three eggs, the researchers said two should be enough to do the job.
So, the next time you're at the salad bar, you may want to opt for those eggs. Not only will they improve your lunch; they'll also boost the entire meal's nutritional value.
And don't skip the yolk. Previous studies have shown that the fat in the yolk, in combination with vegetables, is actually what increases the absorption of those nutrients.
