APRICOT HAZELNUT CHOCOLATE TREATS
20 minutes, 9 servings, gluten-free, vegan, raw.
Ingredients
1 cup unsulfured dried apricots (they should have an orange/brown dark color)
1 cup soft pitted dates
9 whole hazelnuts
¼ cup whole or chopped hazelnuts
¼ cup dark chocolate to melt, 70% and over.

¼ cup whole or chopped hazelnuts
¼ cup dark chocolate to melt, 70% and over.
Directions
With a Chef knife, dice the soft dates and dried apricots into small cubes.
Split the mixture into 9 equal servings and insert 1 whole hazelnut into middle of the ball.
Use a spatula and your hands to compress the fruits and shape it like a cube.
Repeat this for the 9 portions of fruits.
Heat up a double boiler and melt the dark chocolate in the upper bowl. When the water is boiling turn off the heat and let the chocolate melt.
Chop the remaining hazelnut with a chef's knife or a small food processor for 4-5 seconds. Lay the chopped hazelnut on a board and wait.
Take each fruit cube and put one side into the melted chocolate, press down into the chocolate to make sure it is well covered. Then put the same side into the chopped nuts and then place the cube on a waxed paper, chocolate facing up.
Repeat this operation for each cube and then let the cubes cool down into the fridge for 10-15 minutes.
