Zoodles in Alfredo
Zucchini noodles and an herb Alfredo sauce prepared using a cashew cream, Danielle’s Creamy Pesto Pasta with Spring Vegetables is so flavorful! This a deliciously light yet rich and creamy meal, perfect for a summer evening!
4 medium zucchini
1 cup asparagus pieces
2 tablespoons virgin olive oil
8 ounces crimini mushrooms
2 ounces prosciutto
½ cup frozen peas
½ cup cherry tomatoes
1 cup raw cashews
4 cups boiling water
1 tablespoon lemon juice
1 garlic clove
2 tablespoons chopped basil
¼ teaspoon salt
dash of white pepper
dash of nutmeg
Garnish with toasted pine nuts and fresh basil
