Sweet Potato French Toast
INGREDIENTS
1 lg Sweet Potato. .. sliced thin (mandolin slice..1/8 in)
2 tbs Butter
2 Eggs
1/4 tsp Cinnamon
1/8 tsp Nutmeg
Splash of Vanilla

Beat eggs, cinnamon, nutmeg and vanilla in a small mixing bowl.
Melt butter in large skillet over medium heat.
Dip potato slices into egg mixture and place in skillet. Cook for about 4 minutes per side or until golden and fork tender.
Serve topped with butter and maple syrup
