Bok Choy Salad

Ingredients
Prep: 15 minutes | Total Time: 15 minutes
- 2 bunchesbaby bok choy, cleaned and chopped or sliced (about 6 cups)
- 1 bunchgreen onions, chopped
- 1/4 cupsliced almonds, toasted
- 1 8-ounce canorganic mandarin oranges, drained
- 2 tablespoonsolive oil
- 3 tablespoonsseasoned rice vinegar
- 1 tablespoonplus 1 teaspoon RAW honey
- 2 tablespoonslow sodium soy sauce or coconut aminos
Instructions
- In large bowl, combine bok choy, green onions, almonds and mandarin oranges.
- In small bowl, whisk together olive oil, vinegar, sugar and soy sauce. Toss salad with dressing and serve.
