Tuscan Kale Ceasar Salad

TUSCAN KALE CESAR SALAD
(serves 4)
- 2 bunches of Tuscan Kale (also known as Dino Kale or Black Kale)
- 1/4 cup of roasted almonds, finely choppedCesar Dressing:
- 1 egg yolk
- 1 teaspoon Dijon Mustard
- 1 teaspoon Worcestershire Sauce
- 3 tablespoons Lemon Juice
- 2 anchovy filets
- ½ garlic clove
- 1/3-cup extra virgin olive oil
- A pinch of salt and fresh cracked pepper
- ¼ cup Parmesan cheese
- In a food processor or blender at the first 6 ingredients, plus the salt and pepper and blend
- until smooth. With the machine running, slowly add in your oil.
- When oil is incorporated turn the machine off and set dressing aside.
- Finely shred the kale and place into a large salad bowl, dress the salad with a healthy amount of dressing and top with the roasted almonds and a sprinkle of Parmesan cheese. Mix well, serve and enjoy
For added yumminess add: chopped avocado,salad shrimp and handful of grape tomatoes!!That is how I like it!!
